I had class tonight, but I wanted to get this posted before I go to bed. I know I probably won’t remember what I ate today if I wait until tomorrow!
Breakfast: piece of whole wheat bread with avocado and tomato (I’m addicted)
Snacks: blueberry smoothie and a banana (I just wanted to mention that we buy bananas on a regular basis. I would never buy organic until recently, and l can totally tell the difference! Organic bananas taste like bananas are supposed to taste all the time. This is not just in my head. We bought some organic and some non-organic, and the non-organic ones had a little trouble tasting like a good banana. Definitely not as pleasant as the organic.)
Lunch: we were out so I didn’t really have a sit down lunch–I packed snacks….things like almonds, goji berries, raisins, sunflower kernals, cashews, and other stuff like that
Dinner: Ruben and I made a Mexican dish called picadillo. It’s kind of like a soup with potatoes, green peppers, onions, and ground beef. We used an organic green pepper, organic potatoes, and grass fed beef to make it. This is the first time we’ve had beef in awhile! I like not eating meat everyday, though. I don’t miss it a bit, but today was a nice treat for the kids. We usually eat this dish with tortillas, but we opted for either no tortillas (the kids…hmm the ones in the fridge probably have green fuzzy stuff growing on them by now anyway) or some wheat bread (with avocado for me–I told you, I’m addicted.)
After I got home from school snack: I had a little more of the nut/berry mix I made earlier, and Ruben asked me to make some guacamole. I obliged, and we shared a bowl of guac (just tomatoes, avocados, and a little sea salt) with blue corn chips. I hope the scale doesn’t repay me for this in the morning! 🙂

Yes, they can be expensive in the short term, but actually cheap in the long run because they are so much better for your health! 🙂
