I hope you had a good Thanksgiving holiday. 🙂
Our family definitely did. We cooked, we ate, we talked about what we’re thankful for, and then some of us went to my mom’s house and enjoyed a fun time with my extended family there.
As for my goals, I crossed all of them off my list.
Here’s what I accomplished:
Family/Mothering Goals:
1.
Continue to work on memorizing two verses of scripture as a family2.
Make homemade pumpkin puree— With the puree, we made one absolutely delicious pumpkin pie for Thanksgiving, and then with some of the leftover puree, I decided to make a second pumpkin pie a few days later. The second pie didn’t turn out so well, because when I was gathering the ingredients for the pie, I discovered that we didn’t have anymore eggs. I didn’t think that was a big problem because I’ve often used an egg substitute in recipes with good results. So instead of waiting until we had real eggs, I decided to go ahead and use an egg substitute from the pantry. And that was a bad idea because, for some reason, the egg substitute caused our pie to stay runny. It never set up and it’s definitely not as good as my usual recipe that calls for four real eggs. Lesson learned. 😉Personal Goals:
3.
Do resistance band exercises 4x4.
Walk a total of 120 minutes on the treadmill5.
Read 10 pages of The Lord of the Rings (Part One) The Fellowship of the Ring by J.R.R. Tolkien6.

I’m sorry to hear that your pie didn’t come out well! I tried making stuffing with for Thanksgiving with a low-carb style bread that fits with our current diet, and it was terrible. The bread didn’t absorb the eggs and broth, so it there was a layer of cooked egg at the bottom of the dish…yuck!
Hope you have a great week!

It’s amazing how switching out one ingredient for another can turn a dish into something completely different. It’s great when the dish works out, but when it doesn’t, it can be a waste. But…oh, well! At least we know now not to make the same mistakes again. 🙂
