Your enchiladas look so fresh and delicious! I never thought to top mine with lettuce and tomato…I’ll have to try that out this week, as we are having a Sour Cream Beef Enchiladas recipe for dinner tomorrow 🙂

Thanks, Erin! I hope your enchiladas turn out great! Mexicans traditionally top their enchiladas with lettuce, tomato, and cheese (and whatever else they want to add…like onions, etc…). That’s how I grew up eating them. 🙂

All your dinner look delicious. I enjoy having leftovers too. We usually eat our leftovers at lunch but if there is enough for a full dinner we will eat leftovers for dinner too. It’s nice to cook once and have enough for a couple of meals.
