It’s the end of the month so I thought I’d share my overall weight loss results for February.
When I updated you a couple of weeks ago, I had lost .8 lbs. or what amounts to 12.8 ounces. On my last weigh-in, I had lost another .2 lbs. for a total weight loss of 1 lb. in February and an overall weight of 167.6 lbs.
I know it doesn’t seem like I lost much but I’m happy with it. My goal this year is to lose 15 lbs. and I feel like I’m on track to do that. Yes, I need to pick it up a bit, but I think once summer rolls around and we start getting outside more on our family walks, the weight should come off a bit faster.
Plant-Based Foods I’ve Been Eating Since My Last Update
Some plant-based foods I’ve been eating this month are:
- Peas covered with mashed potato soup and crackers
- Mixed vegetables with jasmine white rice and Oceanβs Halo Teriyaki Sauce
- Tomatoes, lettuce, corn, onions, cucumbers, carrots, green beans, olives
- Meatless Chili with crackers (hubby makes a fantastic meatless chili and I love it whenever he is able to get into the kitchen and give me a break)
- Bibibop Asian Grill rice bowl with tofu (hubby had a buy one get one free coupon and brought home two for us today – delicious!)
- Popcorn (of course! I love my popcorn and I eat it plain)
- White rice
- Mexican rice with lots of onions and bell peppers
- Coffee with Silk Toasted Hazelnut Almond Creamer
- Potatoes
- Waffles
- Bread
- Pasta
How I Stay Motivated to Eat Plant-Based
I stay motivated to continue eating this way because I truly enjoy the food and like the way I feel as a result of eating more grains, beans, fruits, and vegetables. When we eat animal products, I typically can’t eat very much because it seems I gain weight just by looking at them! LOL! When I eat plant-based, I can truly eat more and feel satisfied and not deprive my body of the foods it needs to keep me healthy.
I don’t eat until I’m stuffed (I hate that feeling!), but I eat until I’m comfortably full. That’s something I can’t do when eating animal products because when I do, the scale quickly moves in the wrong direction or makes weight loss nearly impossible.
I love being able to sit down to a full bowl of starch (potatoes, rice, beans, etc…) and veggies and not feel like I’m going to have to “pay” for that meal later…in pounds gained. Sometimes my meal is even all starch like if I eat a whole big bowl of popcorn by myself. I do that often and I don’t have to feel bad about it.
Many plant-based people would not recommend that because popcorn (unpopped) is 1,800 per pound on the calorie-density scale. But, really, who is eating a whole pound of popcorn in one sitting? Not me! LOL! I pop around 4 ounces of popcorn at a time and that makes a nice size bowl for me to enjoy.
