It’s a new month and it’s time for an update. At my last weigh-in for February, I was 167.6 pounds and today I weighed…166.6 pounds so I lost another pound!
That means I’ve lost a total of 2 lbs. this year. π
While that may seem like nothing to a lot of people, it’s an accomplishment for me. I lose weight very slowly, so I’m not surprised by my slow-moving progress this year. But guess what? I’ll take it!
Any weight loss is a win for me. Now for what I’ve been eating…
Plant-Based Foods I’ve Been Eating Since My Last Update
Some plant-based foods I’ve been eating are:
- Fideo (this is a Mexican pasta soup and my portion had lots of bell peppers and onions)
- Mixed vegetables with jasmine white rice and Oceanβs Halo Teriyaki Sauce
- Tomatoes, lettuce, corn, onions, cucumbers, carrots, green beans, olives
- Vegan chocolate cake (I made this for my son’s 13th birthday and it was delicious.)
- Bibibop Asian Grill rice bowls with tofu (Hubby has been bringing these home for us here and there on his way home from work. They’re a nice, healthy alternative to traditional fast food.)
- Popcorn (of course! I love my popcorn and I eat it plain)
- White rice
- Chickpeas with jasmine white rice
- Coffee with Silk Almond Creamer
- Potatoes
- Pancakes
- Bread
- Plant-based milk rice (I adapted my own recipe and now make the βmilkβ rice with jasmine rice and Oatly Oat Milk)
- Minestrone soup with crackers (Hubby made this for the family and it was full of starches (potatoes, chickpeas, great northern beans) and veggies – delicious!)
- White jasmine rice mixed with mandarin oranges
- White jasmine rice with cinnamon
- White jasmine rice with cooked apples
- Cream of rice with cinnamon
- White jasmine rice mixed with raisins and lemon-sprinkled cucumbers
