So May was a good month for weight loss for me and my mind continues to be blown by the fact that I’m actually losing weight like a “normal” person after DECADES of struggling to lose the weight I’d gained so long ago.
Weight Loss Results
As for my weight loss, in my last update, I weighed in at 157.4 lbs. Today, I stepped on the scale and weighed 155.0 lbs. so I’ve lost another 2.4 lbs. since my last update! π
I’m so happy with the results I’ve been getting by eating a mostly plant-based diet that includes following the principles I learned from the Rice Diet. As you know, I’ve turned those principles into a lifestyle that works for me and that I can live with for the rest of my life.
Now onto what I’ve been eating…
Plant-Based Foods I’ve Been Eating Since My Last Update
- Mashed potatoes with salt-free spices, low-sodium ketchup, lettuce, and asparagus
- lettuces, tomatoes, corn, onions, bell peppers, green beans
- Fruit
- White rice
- Plant-based Mexican rice
- Pinto beans
- Mashed potatoes with salt-free spices, low-sodium ketchup, and spinach
- Chopped Salad from a restaurant with no meat but it did have some feta cheese
- Smoothies
- Coffee with Elmhurst Oat Creamer (this creamer has no oil and no sodium)
- Potatoes baked in the air fryer
- Air fryer tortilla chips with no-oil
- French bread
- Pasta
- Broccoli
- Cream of wheat with salt-free spices
- Mashed potatoes with salt-free spices, low-sodium ketchup, and lettuce
- Mashed potatoes with salt-free spices, low-sodium ketchup, chard, spinach, and baby kale
- Homemade vegetable soup
- Mashed potatoes with salt-free spices, low-sodium ketchup, and greens beans
- Cream of wheat with salt-free spices and green beans mixed in
- Soy ice cream
Weight Loss So Far in 2022
So far, I’ve lost 13.6 lbs. this year and I’m on my way to losing the 15 lbs. I made a goal to lose in 2022.
I’m as shocked as ever that I’m losing weight the way that I am but this isn’t a dream! LOL – Weight is actually coming off my body and it should continue as long as I continue to eat a plant-based diet incorporating the principles I learned from the Rice Diet.
As I said before, this is a lifestyle for me. I love the food I get to eat every day. I’m thinking about creating some YouTube videos to share about how I’m losing weight. What do you think? Should I? Let me know in the comments below. π
