This year’s Thanksgiving feast is going to simpler than last year’s. It includes all of the dishes that say “Thanksgiving” to us, but it’s easy enough for me to manage on my own (at over 35 weeks pregnant :-)) with the help of a kid or two…..or three.
Here’s what I have planned:
Turkey
Ham
Mashed Potatoes w/gravy *
Cornbread *
Corn (from the freezer)
Biscuits (store bought)
Potato Salad * (smaller portion this year since I’m the ONLY one in my family who likes it)
Sweet Potato casserole *
Deviled Eggs (I’m only using 6 eggs to make these since I’m the only one who likes them)
Fruit Salad
Nachos w/cheese (I wracked my brain trying to come up with an appetizer that EVERYONE in the family would like, and I settled on buying tortilla chips and making some homemade nacho cheese sauce.)
Sausage Meatballs * (an appetizer for Ruben and I)
Artichoke Spinach Dip w/crostini crackers (appetizer for me and perhaps Ruben will give it a try – this is completely store bought from Whole Foods – the dip is fresh and it won me over after a free sample in the store ;-))
Apple Pie *
Pumpkin Pie (store bought from Trader Joes)
Vanilla Ice Cream
* means that I’ll be making these dishes before Thanksgiving Day
The only dish I’m leaving out because I’m the only one in my family who likes it and because it always seems to make me bloated for a couple days after I eat it is….stuffing. I LOVE stuffing, but I couldn’t justify making a pan of it for just me, knowing that I’d be eating it all by myself and that I’d pay for it later in extra pounds and puffiness. I will miss it, though. Oh well….we can have a wonderful Thanksgiving anyway. π
