Super Savings Saturday: After Christmas Finds

Target tripI went to Target on New Year’s Eve after reading on a couple of blogs that some stores had marked their Christmas stuff down to 75% off.  And they were right.  Almost all of the Christmas stuff was down to 75% off, and our local Target had a ton of stuff left.  There were lots of things that we didn’t need like lights, wreaths, ornaments, etc….but I was able to get the following things that we could use for next year extra cheap:

Air Blown Snoopy $7.49 (reg. 29.99) (My kids adore seeing these at Christmastime.  We had our first air blown guy this year which we picked up from last year’s mark downs.  He died once and needed to be rececitated, and would rarely stand up straight so we decided not to keep him for next year.  I’m hoping Snoopy will last longer than our last one!)

Christmas cards $1.74 (reg. 6.99)

Light Clips $0.99 (reg. 3.99)

Gutter Clips $1.24 (reg. 4.99)

Tinsel $0.75 (reg. $3.00)

Green Round Metal bins $0.62 (reg. $2.50) (I found these in the “dollar section”, and I was thrilled!  I’m not sure that they actually belonged in the “dollar section” because they seemed out of place, but there were only four and I bought all four.  They’re sturdy and perfect holding similar toys or toy sets.  For example, we are using one to hold Legos and another to hold a bunch of small balls.  It took me about 3-4 days to complete, but I destroyed the kids’ bedroom and went through just about every toy in there.  We matched up the toys that belonged together and got rid of toys that were no longer useful.  We put others in garage sale boxes for the Spring.  Their room now looks better than ever, and old toys have become like new again.)

Altogether, I spent $15.70, and I saved $47.39! I didn’t use any coupons, but I did use two reusable bags with Target takes off $0.05 each for, and I put this on my Target card which I barely use and pay off each month so that saved me another $0.77 because Target takes off 5% if you use your Target card to pay.

New Year’s Goals

Happy New Year!  I know I haven’t been around much in the last month, but I plan to be more often.  Much more often.  And what better post to start the new year out with than a post about my New Year’s Goals.  I just read through last year’s goals, and it’s interesting to see what I did and didn’t accomplish from last year’s resolutions.  It also reminds me that I need to keep the goals I set in a place where I will see them often! I completely forgot about some of the smaller things I wanted to focus on last year…..like selling more things on ebay.  I did make a little money this way in 2010 (thanks to some great stuff I found on clearance at Walgreens), but I could have made a little more had I put more effort into it.  Here’s what I’m planning on in 2011:

:: Spend 30 minutes a day reading my Bible. My mind is in need of constant renewal, and I would like to finish reading through the Old Testament and read through the New Testament again.

:: Pray more.  Way more. I want to get back into a daily habit of taking time alone with God to pray and also to pray more for other people.

:: Focus on having a kind attitude with my family. With so many things on my plate (college, home school, web design program, life…), and things not yet being settled with Ruben’s job and not knowing when the situation with his job will end and knowing we will have to move again and trying to start a business….I can get overwhelmed and not have the kindest attitude with my husband and family.  I really do want the “teaching of kindness” to be on my tongue more often.

:: Journal. I just picked up my journal last night and realized I didn’t write in it at all in 2010, well, except for last night’s entry which was on December 31st!  I wrote out my New Year’s Goals.  Journaling is something that I will be doing often in the new year, because it’s a way for me to write to God and recount his faithfulness to me.  It’s also a way to remember important things that happen in our family.  Going along with this, I want to be writing in the kid’s baby books/journals as well.  As they’ve gotten older, they’ve come to cherish their individual books and will often go through them and ask me to read it to them.  I’m way behind in writing in them, but that’s going to change.

:: Read 1 ENTIRE book a month. I’m very good at picking up a book and reading the first 60-80 pages and then not finishing it!  I know there are people who can read a novel every week.  I’m not one of them.  I’m simply going to focus on reading a single book each month and if I can get through a WHOLE book before I have to return it to the library, I’ll be very happy!  Most of the books I read have something to do with WordPress or web design.  I hate it that I haven’t made it through one of these books from cover to cover.

:: Wake up by 5:30am every morning. I’m already a morning person.  I made the switch from night owl to morning person almost two years ago, I think.  But, I occasionally slip into a streak where I’ll stay up later than I should which in turn leads to me getting up later or even worse….having my children wake up before me.  I would like to be up by 4:30am every morning, which I have done often, but I’m not going to make that my goal.  Five-thirty in the morning works fine.

:: Exercise 4 days a week. I had mentioned a couple months ago that I was working out to one of  The Biggest Loser workout videos.  Well, that ended, and I’m now starting back up.  I’ve done it three times in the last few days.  The scale has really been motivating me as well!  It’s been going in the wrong direction since shortly after Thanksgiving.   🙁  This leads me to my next goal….

:: Lose 50 pounds. It can be done. It can be done. It can be done. I’m going to count calories to a slimmer me.  It’s the only thing that has worked in the past, and I NEED to just do it.  I’m contemplating blogging my progress.  We’ll see….

:: Blog one post per day. I know I haven’t been blogging much recently, and my goal in 2011 is to post at least once a day.  Every day.  Something.

:: Launch the web design business.  I had originally planned to launch the website in December, but I’ve decided to postpone this for now because I just started an intense two-month web design program, and I’ll also be going back to school full-time beginning on Jan. 18th.  It would be difficult for me to do this plus help clients with their design needs.  Instead, I’m going to wait until at least February when the two-month program finishes up.  I’m still planning on hosting the giveaway before then, though.

:: Pay off our vehicle. We are inching closer to the finish line, and I’m hoping to pay our car off this year.  I’ll let you know when it happens!

I got the grant!

happyI’ve very excited!  I recently found out that I was approved to receive a $6,000 grant for school!  How is that?  Well, I explained the process in more detail on my old blog, A Lot of Savings.  Be sure to read that post for details on how you can apply for this grant as well.

The gist of it is, you find your local training center (mine was our local unemployment office), attend a meeting on the program, fill out paperwork, attend another more detailed session, fill out more paperwork, meet with a caseworker, submit any necessary documents, take tests to make sure you can take college level courses, turn in any still necessary documents, find out whether or not you have been deemed “qualified and suitable” for this grant, meet with caseworker to pick up grant once approved.

That’s basically the process I went through, and from start to finding out I was approved took about four months.  But $6,000 for school is so worth it!  I’m currently attending our local community college and that is being funded by a Pell grant that I received after filling out the FAFSA earlier this year.  I’m going to use the $6,000 grant to attend a specialized training school completely focused on web design.  It’s a two month program focused solely on web design.  I’ll revisit things I’ve learned this semester like HTML and CSS and Dreamweaver.  I need a review for these things anyway.  The more you write code, the better you’ll be at it.  Then I’ll learn new things like XML, Flash, and JavaScript.

I’m really looking forward to it!

Unfortunately, I can’t tell exactly how you can qualify for this program as well.  That information is never divulged.  I just know that there are different ways to qualify for this grant so it’s worth a shot.   🙂

Thanksgiving Recipe Updates

We had a wonderful Thanksgiving!  I hope you did, too.  I tried out several new recipes for Thanksgiving this year, and I wanted to give you an update on how they turned out.

First, I’ll start with the turkey brine.  I used Pioneer Woman’s recipe for turkey brine to brine two turkeys (one for thanksgiving and one “practice” turkey I made ahead of time).  I’ll probably use this recipe again in the future (although, I don’t know when since at the moment I am turkeyed-OUT).  The brine didn’t leave the turkey over salty, and I liked the fresh herbs and different ingredients that were incorporated in the recipe.  It’s a winner.

Next, Pumpkin Cream Pie.  This was delicious, and a nice diversion from traditional pumpkin pie.  The only problem I had with this recipe is that it didn’t “set up” like it was supposed to while chilling in the fridge.  I actually had to put it in the freezer to get it right, but overall, it was delicious.  I would totally recommend this recipe!  It’s one of Pioneer Woman’s.

Now for the Cornbread.  It was so good.  I used my favorite recipe for cornbread, and it never disappoints!  It’s a little sweet and very moist, and because I cooked it in a cast iron skillet, it had a nice little crunch on the outside.  You can get the recipe here on Allrecipes.com, and you’ll find I’m not the only one who loves it!  There’s a reason it has over 2,000 reviews.

I also made Honey Butter similarly to the recipe on Allrecipes.com except I added just a bit of vanilla to it.  It went perfectly with the cornbread.

Then there’s the Mashed Potatoes.  I used Pioneer Woman’s recipe, and I can’t recommend it enough.  The secret ingredient (cream cheese) leaves these mashed potatoes so creamy and utterly delicious.  The leftovers did not last long.

For the stuffing, I meant to use the Pioneer Woman’s recipe, but I ran out of time and had to just do something quick.  It still turned out good, but I wish I would have had time to do the recipe I had intended.  I think if I host Thanksgiving next year, I’ll do the stuffing the day before.  It always tastes better the next day anyway!

The sweet potato dish was wonderful, and it was definitely one of my favorite dishes!  I enjoyed the left overs to the last bite, too!  Even my husband, Ruben, who is one of the pickiest eaters I know, ate it and liked it.  I used another one of Pioneer Woman’s recipes, only I doubled it.  After the sweet potatoes were cooked, I had to put this dish together at lightening speed because my guests were going to be arriving very soon.  Another lesson learned if we host again next year, pushing the time back a bit.

That’s about it as far as recipes you can find online.

I followed a recipe from The America’s Test Kitchen Family Cookbook for the turkey.  It turned out good, but after wresting to get Baby Huey into the brine and then struggling to get Baby Huey out of the brine and ready for the oven, I’m going to think twice about the size of turkey I get for next year.  Baby Huey was over 22 pounds, and because we also cooked a ham and pot roast, we simply did not need that big of a turkey.  I may even just do a couple of turkey breasts for next year instead of a whole turkey.  That sounds A LOT easier to me, and since we all like white meat anyway, we won’t miss the turkey legs.

If you are wondering how I managed to cook a turkey, ham, and pot roast with one oven, I put the turkey in the oven, the ham in a roaster my in-laws gave us, and the pot roast went into the crock pot.

I used my mom’s recipe for the potato salad, and it was delicious.  Same as I remember except without the onions.  I left those out seeing that we don’t have many onion lovers in our family.

For the deviled eggs, I used a recipe from the America’s Test Kitchen Family Cookbook, and they were splendid!  Too bad I forgot to take them out of the fridge before we ate.  Oops.  They ended up being an after dinner enjoyment.  I think the best part of these eggs was making them.  Isaac, our three year old, was helping me to peel the shell off the eggs.  He wanted to help in any way he could with all the thanksgiving preparations.  Anyway, he did pretty well one some of the eggs, and I was impressed.  Other eggs ended up being so “sweet and little” because he had peeled off most of the egg white with the shell!  I salvaged those pieces and used them in the potato salad where no one would notice!  My dad and I did have a laugh watching him peel those eggs, though.

I never did make any pumpkin shakes.

The corn was good.  I just used a package of frozen corn and threw it in a pyrex in the microwave with some salt, pepper, and butter and it was good to go.

I thought about making homemade dinner rolls, but since I had made the cornbread, I went with store bought.  I used the Hawaiian rolls, and they were very good.  I like the hint of sweetness in them.

And finally I went way overboard on the fruit salads.  Lesson learned!  I made two fruit salads, one traditional and one pistachio (which is basically the same as the traditional, but green because of the pistachio instant pudding mix that you add to it).  I had a lot leftover.  Too much.  Next year, if we host, one is definitely enough.
