Thanksgiving is almost here.

And I can’t help but think about what Thanksgiving was like last year and the year before that and when I was a kid. Memories flood my mind, and they’re good memories filled with recollections of happy times that I shared with my family when I was a kid and that I share with my own kids now.

What was Thanksgiving Like When You Were Growing Up?
I thought that today we could reminisce and talk about some of our favorite holiday family traditions growing up – the good ones and even the embarrassing ones, if you have any. 😉

I’ll go first.

As many of you know, I’m Mexican, and I remember my mom and dad always keeping Thanksgiving very traditional. We ate turkey, stuffing, sweet potatoes, and pumpkin pie.

Christmas, on the other hand, that’s when my parents would make loads of tamales, and we’d visit my cousins’ house for their yearly Christmas party. That was so much fun!

Going back to Thanksgiving growing up, I remember that after eating until we could no longer breathe without pain, we’d stay home (no shopping!) and play games, watch TV, or simply talk to each other.

Those were the days…

What Thanksgiving Traditions Do You Keep Now?
Now that I have my own family, I’ve tried to be more intentional each year about keeping Thanksgiving simple yet meaningful.

Here are 3 of our current Thanksgiving Traditions:

  1. We intentionally talk about what and whom we’re thankful for, and we have the kids write their thoughts down ahead of time.
  2. We make a craft or two.
  3. We choose one or two new recipes to try for Thanksgiving dinner.

I’m looking forward to keeping these traditions and building upon them for many, many years to come.

My heart is busted.

For the past 3 months, I’ve watched one of my children goes through unimaginable pain and suffering I wish I could stop. I’ve been in desperate situations that I never thought I’d be in as a mother.

In tears, I’ve experienced many “I can’t do this!” moments.

But one thing that keeps me focused on moving forward and helps me to process this life is the fact that no matter what happens or whatever scary situation I find myself in, I can always talk to someone about it.

That means everything.

Moments of Connection
When I’m connecting with my family and friends and sharing the latest update on David (my four year old son with aplastic anemia), coffee and comfort foods are never too far away. Coffee, in particular, is a part of my everyday life, but even more so now. I start every morning with a cup of coffee as I talk about plans for the day with my husband and kids, and when I can’t be at home because I’m in the hospital with David…coffee keeps me going and helps me to stay alert and attentive to David’s needs.

Actually, when we’re in the hospital during yet another admission and Ruben and the kids come to visit, they almost always arrive with a hot cup of coffee.

They know…coffee is my love language. 😉

Then as I sip on coffee, we talk.

Pumpkin Scones
Lately, I’ve been drinking my fair share of pumpkin spice flavored coffee. But since my kids can’t really enjoy that with me, I decided to use Coffee-mate Pumpkin Spice liquid creamer to whip up a fun Fall treat — Pumpkin Scones.

Recipe: Pumpkin Scones with Pumpkin Spice Glaze #shop

These scones are truly delicious! They’re best served hot, shortly after you take them out of the oven.

Pumpkin Scones

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 6 tablespoons butter, chilled and cut into 1-inch pieces
  • 1/2 cup canned pumpkin puree
  • 1/4 cup pumpkin spice Coffee-mate liquid creamer
  • 1 egg, lightly beaten

Instructions

  1. Preheat oven to 425 degrees, then grease a baking sheet and set aside. (I used coconut oil to grease the baking sheet, but you could also spray it with non-stick spray or line with parchment paper.)
  2. In a large bowl, whisk together the flour, sugar, baking powder, sea salt, cinnamon, nutmeg, cloves, and ginger.
  3. Scatter the butter over the flour mixture and using either two butter knives or your hands, incorporate the butter. Once the butter is incorporated, set mixture aside.
  4. In a separate smaller bowl, whisk together the pumpkin, liquid creamer, and egg.
  5. Pour the wet ingredients into the dry ingredients and stir together using a spatula or spoon until the mixture becomes a soft dough. (May need to use your hands for this step as well.)
  6. On a floured surface, roll the dough out so that it becomes a large, 3/4-inch thick circle.
  7. Place the dough onto the greased baking sheet and using a pizza cutter, slice into eight pieces so that it resembles a sliced pizza.
  8. Place the baking sheet in the oven and bake for about 15 minutes or until the scones are golden brown.
  9. Once the scones are removed from the oven, allow them to cool for about 10 minutes, then drizzle with Pumpkin Spice Glaze (see recipe below) and enjoy!

Family & Friends Make Traveling Down Bumpy Roads Easier
As the roller coaster ride continues with my little guy’s health, I know I can keep going and move forward because of the awesome friends and family I have to lean on. They always provide a listening ear, a hot cup of coffee, and many offers of something good to eat.

Apple pie.

Every year we pay a visit to an apple orchard in Indiana and pick apples to bring home and use to create the most amazing apple pie. But this year, with everything that’s going on with David’s health, traveling far away from home to pick apples isn’t an option.

So instead, we did the next best thing. We headed to my favorite grocery store, Mariano’s, to pick fresh apples that ended up being perfect in our pie. Mariano’s actually has a huge assortment of apples to choose from, and finding the right ones to use for the pie was easy. I carefully selected the apples I needed for the recipe along with several more items on my grocery list. Then I looked through my purse for my Mariano’s rewards card and headed for the checkout lane.

I always love shopping at Mariano’s because it’s more than just a grocery store. It’s an experience, and I can’t think of a better place to snag fresh apples (outside of an orchard) than Mariano’s. 🙂

Double Pie Crust
With any pie, you need to have a great crust, and the recipe I’m sharing for a double pie crust (since you need a top & bottom crust for an apple pie) is delicious! This crust has just the right balance of crunch around the edges, softness on the bottom, and sweetness, since we’re using it for an apple pie.

This is my go-to crust.

Double Pie Crust

Ingredients

  • 2-1/2 cups flour
  • 2-1/2 tablespoons sugar
  • 1 teaspoon fine sea salt
  • 8 tablespoons vegetable shortening, well chilled (I put the shortening in the freezer for at least 15 to 20 minutes before using it in this recipe.)
  • 12 tablespoons unsalted butter, well chilled and cut into 1-inch pieces (I put the butter into the freezer for at least 15 to 20 minutes before using it in this recipe.)
  • 5 to 6 tablespoons ice water

Instructions

  1. In a large bowl, whisk together the flour, sugar, and sea salt.
  2. Scatter the vegetable shortening over the flour mixture and using either two butter knives or your hands, incorporate the shortening. Afterwards, the mixture will resemble coarse sand.
  3. Scatter the butter over the coarse flour mixture using the same method you used with the vegetable shortening. (I actually used a combination of both methods for incorporating the butter.)
  4. Sprinkle ice water over the dough one tablespoon at a time. Press the dough together with a spatula after each tablespoon. Stop adding ice water once the dough has come together.
  5. Divide the dough evenly, so that it's in two pieces. Then flatten the dough and shape it into disks. Wrap the dough disks tightly with plastic wrap, and refrigerate them for 1 hour.
  6. When you're ready to use the dough, remove it from the refrigerator and let it sit for approximately 10 minutes, so that it softens and is easier to roll out.

Recipe: Best Ever Apple Pie & Recipe for a Double Pie Crust #MyMarianos #shopHere’s the recipe for the best ever apple pie:

Best Ever Apple Pie

Ingredients

  • 6 large Honeycrisp apples - peeled, cored, and sliced
  • 3/4 cup plus 1 tablespoon granulated sugar
  • 1 tablespoon light brown sugar
  • 2 tablespoons flour
  • 1 tablespoon lemon juice
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 egg white, lightly beaten
  • 1 Double Pie Crust (see recipe above)

Instructions

  1. Adjust an oven rack to the lowest position and place a rimmed baking sheet on the rack. Heat the oven to 500 degrees.
  2. In a large bowl, toss the apples with 3/4 cup sugar, brown sugar, flour, lemon juice, sea salt, nutmeg, and cinnamon. Set mixture aside, and prepare to roll out the double pie crust.
  3. Roll out the double pie crust on a floured surface then place the bottom crust in the pie pan.
  4. Pour the apples onto the unbaked bottom crust. Make sure the apples create a mound shape in the pie crust.
  5. Lay the top crust over the apples, then seal and crimp the edges of the crust using either your fingers or a fork.
  6. Cut 4-5 vent holes in the top of the pie crust.
  7. Brush the top crust with the beaten egg white, and then sprinkle the remaining tablespoon of sugar over the crust.
  8. Carefully place the pie on the hot baking sheet in the oven then reduce the temperature to 425 degrees. Bake at this temperature until the top crust is golden brown. This should take 20-25 minutes. (I like to set a timer for 20 minutes and check at that point.)
  9. Once the top is golden brown, rotate the baking sheet, and turn the temperature down to 375 degrees. Bake another 30-35 minutes, until the top crust is a deep golden brown and the apple juices are bubbling.
  10. Remove the pie from the oven and allow it to cool before serving.

Thanksgiving Menu

This year’s Thanksgiving feast is going to simpler than last year’s. It includes all of the dishes that say “Thanksgiving” to us, but it’s easy enough for me to manage on my own (at over 35 weeks pregnant :-)) with the help of a kid or two…..or three.

Here’s what I have planned:

Turkey

Ham

Mashed Potatoes w/gravy *

Cornbread *

Corn (from the freezer)

Biscuits (store bought)

Potato Salad * (smaller portion this year since I’m the ONLY one in my family who likes it)

Sweet Potato casserole *

Deviled Eggs (I’m only using 6 eggs to make these since I’m the only one who likes them)

Fruit Salad

Nachos w/cheese (I wracked my brain trying to come up with an appetizer that EVERYONE in the family would like, and I settled on buying tortilla chips and making some homemade nacho cheese sauce.)

Sausage Meatballs * (an appetizer for Ruben and I)

Artichoke Spinach Dip w/crostini crackers (appetizer for me and perhaps Ruben will give it a try – this is completely store bought from Whole Foods – the dip is fresh and it won me over after a free sample in the store ;-))

Apple Pie *

Pumpkin Pie (store bought from Trader Joes)

Vanilla Ice Cream

* means that I’ll be making these dishes before Thanksgiving Day

The only dish I’m leaving out because I’m the only one in my family who likes it and because it always seems to make me bloated for a couple days after I eat it is….stuffing. I LOVE stuffing, but I couldn’t justify making a pan of it for just me, knowing that I’d be eating it all by myself and that I’d pay for it later in extra pounds and puffiness. I will miss it, though. Oh well….we can have a wonderful Thanksgiving anyway. 🙂

For the process, hubby cooked the sausages a bit in the air fryer first and then wrapped them in the bacon. These were from over the weekend.
