Today, I’m showing you how to make my Rapid Weight Loss Mashed Potatoes. 🙂

You’ll be shocked at how simple and easy it is to lose weight with this delicious and nutritious recipe. You’ve never seen mashed potatoes like this before. These are new and different and I’m going to show you exactly how I make them and how you can change them up to make endless flavor combinations that will allow you to lose weight and feel satisfied.

These mashed potatoes are one of the secrets to my weight loss success, and they’ve helped me get to my current weight of 142 pounds (and I’m not finished losing weight just yet).

If you’re looking for a delicious and nutritious way to lose weight, then you should try this recipe for Rapid Weight Loss Mashed Potatoes as these potatoes will help you lose weight rapidly and without much effort. So May was a good month for weight loss for me and my mind continues to be blown by the fact that I’m actually losing weight like a “normal” person after DECADES of struggling to lose the weight I’d gained so long ago.

Weight Loss Results

As for my weight loss, in my last update, I weighed in at 157.4 lbs. Today, I stepped on the scale and weighed 155.0 lbs. so I’ve lost another 2.4 lbs. since my last update! 😀

I’m so happy with the results I’ve been getting by eating a mostly plant-based diet that includes following the principles I learned from the Rice Diet. As you know, I’ve turned those principles into a lifestyle that works for me and that I can live with for the rest of my life.

Now onto what I’ve been eating…

Plant-Based Foods I’ve Been Eating Since My Last Update

  • Mashed potatoes with salt-free spices, low-sodium ketchup, lettuce, and asparagus
  • lettuces, tomatoes, corn, onions, bell peppers, green beans
  • Fruit
  • White rice
  • Plant-based Mexican rice
  • Pinto beans
  • Mashed potatoes with salt-free spices, low-sodium ketchup, and spinach
  • Chopped Salad from a restaurant with no meat but it did have some feta cheese
  • Smoothies
  • Coffee with Elmhurst Oat Creamer (this creamer has no oil and no sodium)
  • Potatoes baked in the air fryer
  • Air fryer tortilla chips with no-oil
  • French bread
  • Pasta
  • Broccoli
  • Cream of wheat with salt-free spices
  • Mashed potatoes with salt-free spices, low-sodium ketchup, and lettuce
  • Mashed potatoes with salt-free spices, low-sodium ketchup, chard, spinach, and baby kale
  • Homemade vegetable soup
  • Mashed potatoes with salt-free spices, low-sodium ketchup, and greens beans
  • Cream of wheat with salt-free spices and green beans mixed in
  • Soy ice cream

Weight Loss So Far in 2022

So far, I’ve lost 13.6 lbs. this year and I’m on my way to losing the 15 lbs. I made a goal to lose in 2022.

I’m as shocked as ever that I’m losing weight the way that I am but this isn’t a dream! LOL – Weight is actually coming off my body and it should continue as long as I continue to eat a plant-based diet incorporating the principles I learned from the Rice Diet.

As I said before, this is a lifestyle for me. I love the food I get to eat every day. I’m thinking about creating some YouTube videos to share about how I’m losing weight. What do you think? Should I? Let me know in the comments below. 🙂

It’s been over a month since my last weight loss update.😬

Sorry about that! I have good news, though.

After 21 years of being considered obese, I’m now officially only overweight.

I know this might sound silly, but I’m pretty happy about this. It was my goal to get out of the weight range that is considered “obese” for my short height, and I’ve finally done it.

I have a smile on my face as I write this because it feels so good. I’m currently wearing either size 8 or 10 in pants depending on the garment. This is also amazing because I was really happy when I was wearing a size 14 and could also fit into a size 12 depending on the style of pants.

To be able to wear size 8 in pants almost every day now is crazy. I went to Kohls over the weekend and left with a new pair of size 8 dress pants. I can easily fit into them and I think they’re going to be a nice addition to my limited wardrobe.

Weight Loss Results

As for my weight loss, in my last update, I weighed in at 162.2 lbs. Today, I stepped on the scale and weighed 157.4 lbs. so I’ve lost another 4.8 lbs. since my last update! 😀

I’m thrilled with this progress, and I think I’ve finally found the right “diet” that works for me. It’s not really a “diet” though in the sense that it isn’t something I’m going to go on and off simply for weight loss.

I think it’s better to say that I’ve found the right “diet lifestyle” that works for me and it consists of foods I enjoy and could eat forever. These foods are filling, full of nutrition, low-calorie, low-sodium, low-protein (but I still get all the protein I need so don’t worry!), and the basic principles of this “diet lifestyle” align with those of the Rice Diet that was popular a long time ago.

As I continue with these weight loss updates, I plan on sharing more about my rice diet lifestyle (which isn’t all rice and actually includes a variety of foods) and I’ll also share resources for those that would like to learn more. So stay tuned.

Now onto what I’ve been eating…

Plant-Based Foods I’ve Been Eating Since My Last Update

  • Popcorn (I eat it plain although I also had a bag of Skinny Pop at a fun Easter event.)
  • Mandarin oranges, apples, bananas, frozen dragon fruit, watermelon, pineapple, dates, applesauce
  • Cucumbers, lettuces, tomatoes, corn, onions, mushrooms, bell peppers
  • Salads with lite Italian dressing or balsamic dressing
  • Buona Beef Chopped Salad with Balsamic dressing and a piece of wheat bread
  • White rice with salt-free spices
  • Smoothies
  • Coffee with Elmhurst Oat Creamer (this creamer has no oil and no sodium)
  • Potatoes baked in the air fryer
  • Air fryer tortilla chips with no-oil
  • French bread
  • Pasta
  • Pancakes
  • Waffles
  • Cream of rice cereal with salt-free spices
  • Cream of rice cereal with salt-free spices and a little marinara sauce
  • Brazil nuts
  • Texas toast from City BBQ (From those of you who read my previous goals post, I ended up eating a side salad with Italian dressing and an order of Texas toast for lunch at City Barbeque. I dipped my Texas toast in City BBQ’s barbeque sauces, and it was so delicious!)
  • Cream of wheat with salt-free spices
  • Black beans
  • Pinto beans
  • Mashed potatoes with salt-free spices, low-sodium ketchup, and greens
  • Cream of wheat with salt-free spices and veggies mixed in

Weight Loss So Far in 2022

So far I’ve lost 11.2 lbs. this year and I’m on my way to losing the 15 lbs. I made a goal to lose in 2022. In fact, since I’ve finally found the diet that works for me as a lifestyle and that I love AND that’s making me healthy, I should have no problem, Lord willing, accomplishing my goal and even surpassing it before the end of the year.

This has been a huge blessing and I wish I would have discovered the rice diet lifestyle sooner. But, oh well, I’m thankful to have the information I have now and I’m ready to continue on this journey!

Well, I’m going to let you in on a little secret. I was listening to Dr. John McDougall on the Chef AJ show recently and he was giving a presentation on his mentors. One of them was Dr. Walter Kempner, whom I’ve heard Dr. McDougall talk about many times in the past, but this time, I don’t know why exactly, I decided to look into Dr. Kempner a bit further after hearing Dr. McDougall mention his work yet again.

Dr. Kempner was a doctor who started the Rice Diet program at Duke University in 1939, and I was intrigued by how Dr. Kempner used his “rice diet” to cure tens of thousands of patients with high blood pressure, diabetes, obesity, kidney disease, heart failure, and sleep apnea. I decided to delve a little deeper into what the rice diet was but the basic components are rice, fruit, fruit juice, and sugar ( 😮 ).

Basically, the diet is high carb, low fat, low sodium, and not too much protein.

And guess what? I decided to give it a try and it’s working! To my utter amazement and astonishment, I’m finally losing weight like a “normal” person on this diet. The last time I updated you guys, I weighed in at 166.6 lbs. and I was hoping to lose maybe one more pound before the end of the month. Well, after being on the rice diet for less than two weeks, I’ve already lost another 4.4 pounds!!!!!!!! I weighed in at 162.2 lbs. this morning.

Yes, that’s my jaw on the floor.

I can hardly believe it. I have more to say about the rice diet and I’ll share some resources in my next update. But for now, I’m in utter shock! LOL

Here’s what I’ve been eating…

Plant-Based Foods I’ve Been Eating Since My Last Update

  • Jasmine rice with cinnamon
  • Mandarin oranges, pineapple, apples, bananas
  • Millet (This is a grain that I cooked up plain to have on hand for quick and easy meals. You can basically use the millet as a base for a sweet or savory meal.)
  • Salads
  • White rice with salt-free spices
  • Smoothie
  • Coffee with Silk Almond Creamer and Oat Creamer
  • Potatoes made into fries in the air fryer with ketchup and mustard
  • Baked potato
  • Japanese sweet potatoes (These are sweet with white flesh inside. Hubby was able to find some nice ones at Whole Foods recently but they aren’t available year-round in our area.)
  • French Bread
  • White jasmine rice mixed with mandarin oranges
  • White jasmine rice with cinnamon
  • White jasmine rice with cooked apples
  • Cream of rice cereal with cinnamon and pineapple
  • White jasmine rice mixed with raisins and lemon-sprinkled cucumbers
  • Jasmine rice with beans

Weight Loss So Far in 2022

So, in total, I’ve lost 6.4 lbs. this year and I’m well on my way to losing 15 pounds in 2022. I have more to say about the rice diet as I plan on making this a lifestyle I can live with. I’m also still learning about how to go about making this a lifestyle and have already purchased several books from Thriftbooks to help me out. More to come!

We have a super small bedroom because we gave the master bedroom to our 3 boys, and the dresser fit perfectly in the spot next to our bed. It's tall, yes, but not too tall.👍 My old dresser became hubby's because he gave his dresser to my oldest daughter.
