We were pretty busy today running errands and grocery shopping (trying to get odds and ends done before school at the community college starts back up tomorrow), but I still managed to keep everyone’s eating under control by packing snacks for the hours we spent away from home. Β Here’s what I ate:
Breakfast: blueberry smoothie and nibbles of the snacks I was packing
Lunch: Kashi mushroom and spinach pizza with raw tomato on top (so good!) and a piece of whole wheat bread with avocado and tomato (avocados are my favorite–I could eat them every day)
Dinner: baked tilapia (Breanna almost made this all by herself and it was delicious! We did follow a recipe from allrecipes.com.)
Snacks: almond/sunflower kernal/chocolate chip mix
Drinks: water except for my breakfast smoothie
I’m not looking forward to the grind of school starting again, but it’s for the best!
