Today, I’m sharing three Mother’s Day gift ideas for moms who love the kitchen plus a recipe tutorial on how to make strawberry shortcakes from scratch. You can find the strawberry shortcakes recipe below the video in this post as well as information on the Mother’s Day gift ideas shared in the video.

Here’s the Strawberry Shortcakes Recipe:

Strawberry Shortcakes

Ingredients

    For the Fruit Topping:
  • 3 pounds of strawberries, hulled
  • 1/2 cup of sugar
  • 3/4 cup orange juice
  • For the Shortcakes:
  • 2 cups all-purpose flour plus extra for the counter
  • 4 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt (I use fine Himalayan Pink Salt)
  • 8 tablespoons unsalted butter, chilled and cut into chunks
  • 2/3 cup almond milk
  • 1 egg, lightly beaten
  • 1 egg white, lightly beaten
  • For the Whipped Cream:
  • 2 cups heavy whipping cream, chilled
  • 2 tablespoons sugar
  • 2-1/2 teaspoons vanilla extract

Instructions

  1. In a large bowl, measure out about 3 cups of strawberries and crush them with a potato masher.
  2. Slice the remaining strawberries and add them to the bowl with the crushed strawberries. Then add the sugar and orange juice, and stir the ingredients together. Once the ingredients are incorporated, place the strawberries in the refrigerator to chill.
  3. For the shortcakes, get the oven ready by adjusting the oven rack to the lower middle position and heat the oven to 425 degrees.
  4. Pulse the flour, 3 tablespoons of the sugar, baking powder, and salt together in either a food processor or a Nurti Ninja with a blend and prep bowl just until they're combined.
  5. Add in the chunks of butter and pulse until the butter has been combined. Then transfer the ingredients to a large bowl.
  6. Mix the almond milk with the whole egg that's been beaten. Then add those ingredients to the flour mixture in the large bowl. Gently stir the ingredients together just until incorporated, then turn the dough out onto a lightly floured surface.
  7. Gently knead the dough by folding it onto itself 3 or 4 times. Then shape the dough into a small rectangle that's about 1-inch thick.
  8. Line a baking sheet with parchment paper. Then using a biscuit cutter (or a circular 1-cup measuring cup), cut out 6 biscuits and place them on the parchment paper about 1-inch apart. You should have enough dough left over to make 2 more biscuits for a total of 8 biscuits.
  9. Once the 8 biscuits are on the baking sheet, brush the tops with the egg white and then sprinkle the remaining 1 tablespoon of sugar over the biscuits. Then place the biscuits in the oven and bake for about 14 minutes or until the shortcakes are golden brown.
  10. Once you remove the shortcakes from the oven, allow them to cool for 10 to 15 minutes while you make the whipped cream.
  11. For the whipped cream, place the heavy whipping cream, sugar, and vanilla extract in a chilled medium-sized bowl, and whip with an electric mixer on low speed for about 3-5 minutes. Whip until soft peaks form. Be very careful not to over-whip.
  12. To assemble the strawberry shortcakes, split a biscuit in half on a plate. Add a heaping spoon of the strawberries to the bottom half, then add a dollop of whipped cream to the strawberries. Place the top biscuit on top of the whipped cream and then add another heaping spoon of the strawberries over the top biscuit and another dollop of whipped cream to that. Repeat this step with the remaining biscuits. Serve and enjoy!

Potty training a toddler is no walk in the park.

I believe this is why we moms get to celebrate a holiday known as “Mother’s Day.”

Am I right? 😉

Seriously, though, I should know. I have five kids. And we’re currently working on potty training baby number five, my beautiful and feisty 2-year-old daughter, Elisabeth.

But you know, I think that with the right tips, tools, and mindset, potty training your toddler CAN be a great bonding experience.

It can even be fun to “Say Adios to Diapers!” together.

We’re Using Pull-Ups Training Pants

Because our kids are all different, we have tried varying methods and techniques when it came to potty training each of them. For Elisabeth, we purchased a new potty seat for the commode in addition to Pull-Ups Training Pants.

So far, Elisabeth wants little to do with her new seat, but she adores her Pull-Ups!

She’s decided that she’s done with diapers, but she still needs a little motivation for actually making it to the bathroom to use the potty.

Tip #1: Be willing to follow your child’s lead. If your son or daughter seems ready to begin potty training, go for it! Grab the Pull-Ups and get started!

Tip #2: Be careful to involve your child. Take them to the store and pick out a new potty seat or search for one together online. Talk to them about the fun characters and designs that are on the front and back of Pull-Ups Training Pants. Elisabeth loves picking out which design she’s going to wear next.

Tip #3: Be patient…boys generally take longer to potty train than girls. From personal experience and from what’s been shared with me by other moms, I think it’s true that boys take longer to potty train than girls. Your son may also not be ready to start potty training as early as your daughter was.

Tip #4: Be motivating and celebrate your child’s success! Do a happy dance or have a mini-party when there’s potty training success. 🙂

Tip #5: Be prepared to give lots and lots of grace. Just as with anything else, when little ones are learning a new skill, we need to be ready to show grace when mistakes are made. There will be accidents, but how we react to those accidents is what matters most.

Our Final Potty Training Journey has Only Begun

We still have a long way to go before Elisabeth is completely potty trained. But you know what? I’m not in a rush. Maybe it’s because we’ve been down this road before or maybe it’s because she’s our last baby.

However long it takes is fine with me.

My heart is busted.

For the past 3 months, I’ve watched one of my children goes through unimaginable pain and suffering I wish I could stop. I’ve been in desperate situations that I never thought I’d be in as a mother.

In tears, I’ve experienced many “I can’t do this!” moments.

But one thing that keeps me focused on moving forward and helps me to process this life is the fact that no matter what happens or whatever scary situation I find myself in, I can always talk to someone about it.

That means everything.

Moments of Connection
When I’m connecting with my family and friends and sharing the latest update on David (my four year old son with aplastic anemia), coffee and comfort foods are never too far away. Coffee, in particular, is a part of my everyday life, but even more so now. I start every morning with a cup of coffee as I talk about plans for the day with my husband and kids, and when I can’t be at home because I’m in the hospital with David…coffee keeps me going and helps me to stay alert and attentive to David’s needs.

Actually, when we’re in the hospital during yet another admission and Ruben and the kids come to visit, they almost always arrive with a hot cup of coffee.

They know…coffee is my love language. 😉

Then as I sip on coffee, we talk.

Pumpkin Scones
Lately, I’ve been drinking my fair share of pumpkin spice flavored coffee. But since my kids can’t really enjoy that with me, I decided to use Coffee-mate Pumpkin Spice liquid creamer to whip up a fun Fall treat — Pumpkin Scones.

Recipe: Pumpkin Scones with Pumpkin Spice Glaze #shop

These scones are truly delicious! They’re best served hot, shortly after you take them out of the oven.

Pumpkin Scones

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 6 tablespoons butter, chilled and cut into 1-inch pieces
  • 1/2 cup canned pumpkin puree
  • 1/4 cup pumpkin spice Coffee-mate liquid creamer
  • 1 egg, lightly beaten

Instructions

  1. Preheat oven to 425 degrees, then grease a baking sheet and set aside. (I used coconut oil to grease the baking sheet, but you could also spray it with non-stick spray or line with parchment paper.)
  2. In a large bowl, whisk together the flour, sugar, baking powder, sea salt, cinnamon, nutmeg, cloves, and ginger.
  3. Scatter the butter over the flour mixture and using either two butter knives or your hands, incorporate the butter. Once the butter is incorporated, set mixture aside.
  4. In a separate smaller bowl, whisk together the pumpkin, liquid creamer, and egg.
  5. Pour the wet ingredients into the dry ingredients and stir together using a spatula or spoon until the mixture becomes a soft dough. (May need to use your hands for this step as well.)
  6. On a floured surface, roll the dough out so that it becomes a large, 3/4-inch thick circle.
  7. Place the dough onto the greased baking sheet and using a pizza cutter, slice into eight pieces so that it resembles a sliced pizza.
  8. Place the baking sheet in the oven and bake for about 15 minutes or until the scones are golden brown.
  9. Once the scones are removed from the oven, allow them to cool for about 10 minutes, then drizzle with Pumpkin Spice Glaze (see recipe below) and enjoy!

Family & Friends Make Traveling Down Bumpy Roads Easier
